This film shows you how to judge the features of beef (meat, muscle and confirmation), looking at the structure of the loin, leg, (for pigs it would be ham and hogs), we call it loin or flank, leg of lamb, etc. Evaluate them for width of top, expression of muscling, chest floor, width between front legs, and gait.
